A holiday favorite from the archives of Grammie Walsh

Have you ever mourned the loss of someone you never met? One person I’ve grieved is Shirley Walsh, the grandmother of my children. Although I never had the chance to meet her, I feel a connection to her. Our “relationship” dates back to my college days. Shirley was the best friend of my BFF’s mother, and I heard many stories about her. I recall her falling ill and passing away at the end of my senior year of college. Shirley and my own mother shared similar career paths as beloved school cafeteria ladies. Both women had a passion for cooking for family, friends, and the hundreds, maybe even thousands, of students who passed through their cafeteria lines.

My heart aches for my kids, who only know her through stories. Grammie loved following local sports, and I believe she has been cheering on her grandchildren’s athletic journeys from heaven. I’m sure I’ll come across and share more of Grammie Shirley’s recipes in the future, but for now, this one has had the biggest impact on holidays with my own family. Both my mom and dad adored this baked pineapple recipe, as did all the Walsh/White family members who gathered around holiday tables over the years.

It will be 30 years this month since Shirley left this world. I hope that by sharing her baked pineapple recipe, family members and friends will remember how cherished they were with Shirley’s cooking. This recipe brings her presence to the table, just like in the good old days! Enjoy! Baked Pineapple

Ingredients

  • 20 oz can Crushed Pineapple

  • 1/2 cup White or Brown Sugar

  • 1 1/2 T Cornstarch

  • 2 Eggs – Beaten

  • 1 tsp Cinnamon

  • 2 T butter

Directions

  • Preheat the oven to 375 degrees
  • Combine crushed pineapple, sugar, cornstarch, and cinnamon in a 1 1/2 quart casserole dish
  • Beat the eggs, pour over mixture and combine
  • Dab button on top
  • Bake at uncovered for 30 minutes after it bubbles

  • My daughter was allergic to eggs and I used to spoon a serving into a small oven safe pyrex dish before I added the egg.
